A lot of people ask for quick and simple meals and this is it. One of the biggest obstacles is tackling the protein part of the plate. Eating a sufficient amount of protein throughout the day is VERY important for obtaining and maintaining lean muscle mass, increasing fullness, stabilizing blood sugars and mood, and managing your weight more easily.

Chicken is one of the most common forms of protein that my clients eat. There are many ways to eat chicken, but a common mistake is rotating the same 3 chicken recipes. This is WHY you’re over chicken!

Personally, I like my chicken either shredded or marinated and grilled. I don’t find baked chicken as appealing unless it’s thin. I know I’m not alone in this, but I don’t want my chicken to taste like chicken! You should be enjoying your food because this is what helps you stay consistent in your nutrition journey. If you’ve read my blog before, you know I’ve said that MANY times, but it’s the truth!

This instant pot recipe will help you not only cook your chicken in 15 minutes, but also have a tasty meal without you worrying about what to cook after work. It can also be converted into a crock pot recipe. Most people don’t know that most recipes, that are instant pot recipes, can be converted into a crock pot recipe by adjusting the heat setting and cooking time.

Recipe Tips

  1. In the instant pot, you can use frozen chicken! It will just need a few minutes longer to cook.
  2. The instant pot NEEDS moisture to cook and create that high pressure. If you are cooking chicken on the bottom of the pot without the rack, make sure you add AT LEAST 1 cup of sauce to the pot. If you don’t add enough liquid to the pot, the instant pot will alert you that you need to add more water, otherwise, it will burn.
  3. The best shredded chicken comes from the instant pot. If you’re not a fan of shredded chicken, you can still enjoy your chicken whole. With this recipe in particular, I think it’s easier to spread the juices around after it’s shredded.
  4. Which brings me to my next tip, don’t discard the juice! Shred your chicken and add the leftover liquid from the instant pot to the bowl!
  5. Lastly, the harissa chicken is delicious, but if you want a more flavorful taste, add the Tzatziki sauce. They pair SO WELL together and I don’t think you should pass up on this combination! *Also the tzatziki sauce is made from Greek yogurt and can add a little bit of protein to your meal!

Don’t feel defeated if this doesn’t come out perfect – I’m speaking to my people who love food, but cook out of necessity for survival. Add more sauce the next time. Add more spices that you like. Get creative and let me know how it comes out!

So, roll up your sleeves and get to cooking!

Calories 175 kcal

  • 1 Instant pot

  • 1 tsp Olive oil, optional
  • 1.5 lbs Chicken breast, boneless, skinless
  • 1 jar Mina Harissa Sauce
  • 1 dash Salt, to taste
  • 1 dash Pepper, to taste

  • Add olive oil to pot before adding the chicken. This is optional. You can also use a nonstick spray if you would like.
  • Lay chicken flat in the instant pot (do not stack).
  • Add a dash of eat salt and pepper. You can always add more after cooking.

  • Quick release the pressure and allow the steam to come out until it stops. Open the instant pot and remove the chicken into a bowl.
  • Shred the chicken until you achieve the desired size pieces. Add juice from instant pot to keep the chicken moist!
  • Serve immediately on a bed of lettuce or in a bowl with rice, chickpeas, cucumbers, and tzatziki sauce (see tips in blog post for more info) & enjoy!
